Mother Hubbard's Cafe is consistently included Tucson Weekly's list of Tucson's Essential Dishes - and for good reason! This chef-owned, locally sourced breakfast and lunch destination offers something from everyone, from house-made bacon, sausage, and brisket options to delicious waffles including vegan and gluten-free options.
The thick cut bacon is hand-rubbed with salt and spice cure, dry aged and mesquite smoked in our smokehouse with no artificial flavor added. Their back bacon or “Canadian bacon” is from the pork loin, wet cured using a Thai brining technique and Baja Arizona sensibility to spicing, dry aged and mesquite smoked. MHC's corned beef is wet cured, using another Baja Arizona spice mixture. It’s slow braised using one of Dragoon Breweries’ seasonal beers and served in their corned beef hash or in their sandwiches utilizing their own naturally fermented nopales jalapeno sauerkraut. New for the summer is a pepper lime, pecan smoked pastrami. Finally, their sausages are all fresh cured using heritage pork locally sourced from E & R Pork, who raise Berkshire, Red Waddle and Duroc hogs here in Tucson with no added nitrites or fillers and using only the freshest herbs and seasonings.
